This caesar dressing is as healthy as it gets and it is so yummy! The only thing you have to keep in mind before making it, is that you need to soak the cashews for around 2 hours beforehand. Cover them in water and let them sit and you're good to go with the rest. It's well worth it. Enjoy! Caesar Salad DressingIngredients: 1 ¼ cup water 2/3 cup extra virgin olive oil 3 tbsp lemon juice (fresh squeezed) 1 cup cashews, soaked (2 to 4 hours) 6 or 7 garlic cloves 1 tsp Dijon mustard 1 tsp sea salt ½ tsp fresh ground pepper Pinch of cayenne pepper Slivered raw almonds for topping Makes 3 cups of dressing Store for 1 week in a mason jar or airtight container. 4 heads romaine lettuce, chopped **You can use kale as well or even pre-packaged greens if you’re time crunched Instructions: Place all of the dressing ingredients into your blender and blend until smooth. Toss the romaine lettuce with 2 cups of Caesar dressing. Divide into 6 dishes and top with slivered almonds.
