These bars are fantastic and super easy to whip up. They are dense and filling and perfect for throwing into you bag as a snack or to take on your ride as ride food. I usually add chocolate chips to them and once they are baked, I like to chop them up and wrap them individually to be kept in the freezer for times when I'm in a pinch. Enjoy! ¼ cup coconut oil ½ cup of crushed raw walnuts, pecans, cranberries or chocolate chunks/chips (or a mix) (optional) Instructions:

Cycling singlehandedly was the catalyst for all of the good that has come into my life including: ::: my health ::: losing weight (from over 200lbs to 135lbs!) ::: feeling empowered ::: building my confidence ::: feeling a sense of immense FREEDOM with the wind in my hair ::: time for ME doing something that I loved and was FUN ::: introducing me to a community of people that 'got' ME ::: like-minded people that were supportive of my goals and dreams ::: going back to school for nutrition ::: somewhere that I could push myself ::: seeing new places and countries on my two wheels ::: my form of meditation And that's just off the top of my head. When I started cycling, I got the fun and happy in my life back. It's the reason I'm so deeply passionate about helping others especially women to experience any part of this. If this sounds like something you'd love for your life, I invite you join my free community of people transforming their lives through cycling and nutrition. See you on the inside!
