We might have had a little contest to post this. Between my business Facebook page and my personal account, the chocolate pudding won by a landslide against my chocolate chip cookies! There is a secret ingredient in this pudding. When I first saw this bad boy I knew it was going to knock my socks off. By now I have experimented with enough recipes that I can kind of tell. Sometimes I get surprised though! This recipe is super easy and so freakin' yummy. It might be that you don't have a couple of these ingredients especially the arrowroot powder. For sure your local health food store will have that or even the Bulk Barn if you're in Canada. Arrowroot powder is a root starch and is a natural thickener. Arrowroot works really well for when you need a starch to thicken your dish right at the very end. So things like custards, pie fillings and puddings. Use dessert ramekins, for a little post-dinner chocolate lovers delight!
Instructions:
In a medium pot, whisk the cocoa powder, arrowroot, and salt. Slowly whisk in the coconut milk, coffee and water until fully combined. Stir in the honey. Heat the chocolate mixture on low-medium heat, stirring frequently, until a gentle boil is reached, approximately 15-20 minutes (might be less). Once a gentle boil is reached, whisk constantly until the pudding begins to thicken, about a minute. It should be like the consistency of pancake batter. Remove from the heat and whisk in the chocolate chips and vanilla. Divide evenly among six small ramekin dishes. Chill until set, at least 3 hours. Top with fresh raspberries and a mint leaf. Enjoy! Serves 6
