Never in a million years did I think that one day I would taste something completely cheesy BUT that it would have NO CHEESE in it. I absolutely love this cheese sauce and it has become a staple for my fridge and freezer. Yep, I said FREEZER! You can actually freeze this orange stuff and it tastes just as good as when you first made it. AND I'm usually making a double or triple batch of it. Some of you may or may not know but I'm a huge fan of making dishes, sides, sauces, desserts that take something that I LOVE and making it the healthiest version it can be AND still taste good. The other thing you may or may not know about me is that I'm a time saving kinda gal. Although I do not have kids to rush around, I did (until recently) hold down a full time job, my successful and fast growing business and all the other parts of my life. So, being able to keep my ENERGY up with the amount of TIME I had were huge for me. Was it hard? HELLS YES. It is still hard sometimes. You betcha. Having said that my health IS at the forefront for me. I'm constantly looking for ways to be healthy, keep things as simple as possible and still keep my shit together. This is also very much how I work with my clients. I'm a nutrition strategist. I help support my clients in keeping their shit together amidst the chaos and their desire of wanting to stay active and eat healthy. AND not beating the crap out of ourselves when things don't exactly go our way or as planned. With that said, here is a killer cheese-less cheese sauce that will knock your socks off. It's a great alternative to cheese, it's super easy to make and can be used in main dishes as well as on vegetables as a side and on nacho chips. Like I mentioned above, I make batches of this and freeze it in 250ml and sometimes 125ml mason jars and store them in the freezer for future use. Enjoy! Instructions: Combine cashews and grated carrot with boiling water. Blend until smooth. Add remaining sauce ingredients and purée until creamy.
